As a child, Chef Sofia was extremely passionate about cooking. Growing up, she was fortunate to have people in her life who exposed her to the kitchen and nurtured her incredible talent. Knowing her passion would one day lead to chasing her dream in the culinary industry, Sofia recieved a degree in Business Administration.
Chef Gillaspie continued to expand her knowledge by enrolling in the International Gastronomy Institute, where she was particularly drawn to baking and the historical influences it had on Mexican culture and traditions.
During her growth as a Chef, Sofia had the opportunity to work for many influential politicians in Mexico; one of who brought her on as their personal chef. Eventually, this led to Sofia sharing her expertise by giving classes at Campo Mate, a well-known establishment for its high-ranking military officials. At the Campo, Sofia trained the staff of chefs exquisite dishes unique to Mexico.
Sofia continued to teach at the Universities of Gastronomy in Mexico City, Morelos and Guanajuato. “After arriving in the city of San Antonio, I noticed a large interest in authentic dishes and pastries. Speaking with many Mexican nationals now residing in San Antonio, I constantly heard how they missed authentic, Mexican, baked goods, Pastries and meals that reminded them of home.”
Identifying this need led to the upbringing of Bread Tabachines, ensuring high-quality, artisinal food, not only reminding people of home, but sharing her taste of home with the city of San Antonio.
